Is there anything better than having pancakes for breakfast on a Saturday morning? I don’t think there is. Usually, I use different pancake recipes every time I make pancakes, but this recipe is different. I have made these pancakes several times since I created the recipe a while back and I’ve also tried it with different flavors. For example, if you add a tbsp cacao, your pancakes will get a wonderful chocolate-y taste – so good they can actually be served as dessert together with ice cream and/or fresh berries.
I also love to add all kinds of spices and herbs to the batter. A personal favorite is cardamom together with cinnamon. This combination, I believe, is perfect for chilly autumn mornings when all you want to do is stay in bed and forget about the world outside. Like most weekends these days, right?
Another thing that I love with these pancakes is that they easily can be turned into a more savory kind of dish. Just add spinach or grated carrots to the batter. The spinach will give the pancakes a nice greenish color which is really beautiful. And to all the mamas and papas out there – green pancakes seem to be a favorite among kids, just tell them that dinosaurs eat green pancakes for breakfast and the pancakes will be gone in a few seconds. Ok, so these pancakes can be used in many different ways and the most important thing is that you make them and use your imagination to come up with new great versions of this recipe. Oat pancakes with blackberries
3 tbsp plant milk
1 tbsp vegetable oil or melted butter (I used canola/rapeseed oil)
3/4 cup oat flour
1 1/2 tsp baking powder
1/2 tsp cardamom
1/2 tsp cinnamon
pinch of salt
blackberries (or other berries)
Beat the eggs, plant milk, and vegetable oil. When combined, add oat flour, baking powder and a pinch of salt.
Heat up a frying pan and add a little butter or vegetable oil. Spoon out the pancake batter (about 1-2 large tablespoons at the time) and fry for a couple of minutes on each side.
