Hello my friends, how are you? It has been quiet here on the blog for too long. Truth is, I’ve had a tough week, to say the least. In the beginning of January, my beloved aunt passed away. The funeral was last week and I’ve been feeling drained ever since. In one way it all still feels unreal, but at the same time, it’s starting to sink in. I guess. It’s going to take time, and I need to take as much time as I need to cope with it all. It’s overwhelming at times, but I know it will get better, even though she will be missed forever. And for each day passing by, I’m remembering things. Memories I have of her. Because I have a lot of beautiful memories of her. She was always happy and positive. She loved people and was never judgmental. She wanted people to be happy, to not worry and she always encouraged me to chase my dreams. Her positive attitude and her lovely laugh are two things I will always remember and keep in my heart forever.
It’s hard to talk about loss, but it’s so important that we do. In the online world, we tend to only talk about the positive things and leave out the bad things. But they happen. Life’s hard sometimes, and nothing gets better by pretending that the bad things don’t exist. We don’t have to (nor should we) share all the details, but I feel that it’s so important that we do share some of it. No bad things have ever come from people opening up, sharing, talking and letting others know that they are not alone. You are not alone.
The pain can be almost unbearable, but it will get better. As time goes by, we start to remember the good things. When you think of the person, beautiful memories will pop up, rather than memories of pain and loss. We start to remember the person we knew, the beautiful things we had together. It can take time, but it will come. And those are the memories we will carry in our hearts forever.
One thing we had in common, my aunt and I, was the love for being outdoors. Foraging for mushrooms, blueberries, and raspberries. Breathing fresh air. And cooking of course. She was such a good home cook and she loved to use fresh herbs and potatoes from her garden whenever she had the chance. She was also brilliant at finding the most delicious raspberries (without worms in them).
A couple of weeks ago, I decided to create a recipe in memory of my aunt. I wanted to base it on something that she really loved, and I immediately thought of raspberries. So, I decided to make a raspberry smoothie bowl and top it with all the nice toppings I could think of.
This one’s for you, auntie. I miss you.
My auntie’s raspberry smoothie bowl
1 frozen banana
2 1/2 dl | 1 cup frozen raspberries
1 dl | 100 ml plant yogurt
1/2 tbsp chia seeds
Cashew nut butter
Vegan chocolate, shredded
- Add all the ingredients except the toppings to a high-speed blender and blend until smooth and creamy.
- Pour the smoothie into a bowl and add the toppings.
