As the spring has arrived I’ve finally been able to replace my porridge breakfasts with smoothie bowls. The winters here in Sweden could be terribly cold so during those cold months I need to eat hot food to stay warm. But just like I put my winter coat away, I give up my porridge breakfasts (at least for a while) to enjoy some more spring themed breakfasts. My favorite? Smoothie bowls! Smoothie bowls are so simple to make and they are so delicious! Plus, it seems to be countless variations of them.
My favorite combination right now is raspberries, strawberries and banana. The summer berries (strawberries, raspberries, blueberries, blackberries, cloudberries) are one of the best things about living in Sweden. This bowl makes me think about those summer days when you walk barefoot on small paths in the forest and there are wild berries all around you. I love those moments!
1 frozen banana
2 dl raspberries
0,5 dl coconut water
2 strawberries, sliced
Handful of cashews
Add the banana, raspberries, strawberries and coconut water to your blender and mix until smooth. You can add more coconut water if your smoothie is too thick.
Add all the toppings to your bowl and enjoy!
