Do you guys also have recipes that you know by heart? Like, if you woke up in the middle of the night and someone asked you if you could cook this meal for them, you would do it without even thinking? It’s like you could almost prepare it in your sleep if you had to. You know what I mean?
Personally, I have a handful of dinner recipes like that. Those are my favorite everyday-recipes that I always get back to when the inspiration is lacking, or when you’ve been really busy the whole day and then boom! you have to make dinner. Quickly, because you’re hungry. And with ingredients that you have at home already, because no one wants to go grocery shopping when hungry and tired and just not in the mood. So, basically these recipes are life-savers.
One of my favorite recipes among my life-saving-know-by-heart recipes is the one I’m going to share with you today - zucchini & corn patties. Actually, it’s an old one and I actually published it on my old blog last summer. Those of you who have followed me for a while know that I blogged over at The Waves We Make for about a year, but when I decided to be on my own again I wanted to rebuild my website and create something new. Something that was me. Also, I wanted to start writing in English again. So I couldn’t just transfer all my blog post to my website and be done. No, I had to translate every recipe and I also wanted to go through the recipes I had created and make sure they were ok, had great pictures and so on. It has been quite a lot of work to do all this and there are still a lot of recipes that need translations and updates.
The old recipes that I still want to keep will be re-published (some with new photos) here on my blog as soon as they’re ready. Together with a lot of new content ofc! Enough about that, let’s just say that today’s recipe is an oldie but goldie. These zucchini & corn patties have such a nice and crispy texture and a perfect mix of sweet corn and fresh herbs. The fact that they are super easy to make is of course a winning characteristic as well! Let’s check out the recipe, shall we?
Zucchini & corn patties
1 zucchini + 1/2 tsp salt
150 g corn
1,5 dl canned chickpeas
2 garlic cloves
1 dl corn flour
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh mint, chopped
1/2 tsp cumin
salt and black pepper to taste
1 egg (or 1 chia egg if vegan*)
non-flavored coconut oil or butter for cooking
* mix 1 tbsp chia seeds + 3 tbsp water and set aside for a few minutes until you have a gel like mix. Then use in the same way as a chicken egg.
Roughly grate the zucchini and put it in a bowl. Add salt, mix and let rest for about half an hour. By doing this, the zucchini will release a lot of its water and the patties will stick together a lot better.
Meanwhile, rinse the corn and chickpeas and mix until smooth by using a blender/mixer. Mince the garlic cloves and add to the corn mix together with corn flour and chopped herbs.
Use your hands to squeeze out as much water as possible from the zucchini and add it to the corn mix. Stir thoroughly. Add cumin, salt, black pepper and the egg (or chia egg). Mix again and then form patties, about 1,5 cm thick.
Heat up some oil or butter in a frying pan and fry the patties over medium heat for a few minutes on each side. The patties are done when slightly golden.
Serve with oven roasted potatoes, a big salad or use the patties as burgers. The opportunities with these patties are endless! I can also tell you that they're super delicious when served with pesto.
