It feels like I haven’t been blogging for a month, but it’s actually ”only” a week. I have been taking a break from Instagram too, which I didn’t plan to from the start. I thought that I should just stay off social media over the weekend and now it’s Wednesday and I have no idea what happened. It has been quite nice though. I love Instagram, but taking a break like this has been nice. I’m relaxed and full of creative ideas that I want to start working on asap.
As you probably know, I’m working part-time with my business (freelancing and all things related to my blog) and part-time as brand manager at a vegetarian + organic supplements company. Balance is key if everything should work out (it does!). Right now, I have a lot to do in my role as brand manager and naturally, the blog gets less attention at the moment. That being said, we can now move on to what this blog post is all about – chocolate waffles.
I don’t know how I came up with the idea to make chocolate waffles, but when I searched for it on Pinterest I realized that I certainly wasn’t the first person on earth making chocolate waffles. I basically used my old waffle recipe and added some cacao to it and voilà! The second time I made them I decided to add some real chocolate to the batter. The chocolate gave the waffles a more intense chocolate taste, which I guess is pretty logical. I think the version with chocolate is perfect for dessert, while the ones without are perfect for brunch or breakfast. But that’s just me, you do exactly as you like. Recipe after the jump!
makes 4-6 waffles
2 dl | 200 ml rice flour
1 dl | 100 ml oat flour
1/2 tsp baking soda
3 tbsp cacao powder
1/2 tsp vanilla powder
pinch of salt
2 medium-sized eggs
150 ml plant milk
1 tbsp maple syrup
* If you want even more chocolate to your waffles, finely chop about 30-40 g chocolate and add to the batter.
Preheat waffle iron.
Mix together flour, baking soda, cacao powder, vanilla powder and salt in a baking bowl.
Whisk together eggs, plant milk, and maple syrup.
Add the dry ingredients to the egg mixture and stir.
Spoon batter into the waffle iron (about 50-60 ml batter for each waffle) and cook until ready. Serve with ice cream, nut butter, maple syrup and/or chopped chocolate. Enjoy!
