Although we’ve had some really cold weather and snow (!) here in Sweden the last days, my mind has decided that it’s spring and nothing can change that. I’m walking around in my spring coat, stubbornly refusing to bring out my winter coat from the closet. Once it has been put away it stays away.
I guess you can tell that I’m going all in on the spring feelings just by looking at my latest Instagram posts (and blog posts for that matter). Everything is just fruity and colorful!
One of the best things about the spring and summer season must be all the delicious and healthy popsicles you can make. Last summer my top search on Pinterest must have been ”vegan popsicles”. I guess it’ll be the same this year. Of all the different recipes I tried last year I found at least one favorite. It’s really nothing special about it, there must be like a 100 versions of this recipe out there, but I guess that’s just proof that these popsicles are extremely good.
Just imagine a combination of smooth plant yogurt, sweet summer berries and crispy granola. There you have it. The most delicious combination ever. And the key ingredients in my popsicle recipe which you can find below.
Popsicles with granola and blackberries
5 dl unflavored oat or soy yoghurt
1/2 tsp ground vanilla
3 tbsp coconut sugar
1-2 dl granola
To make these you’ll need 4 popsicle molds and ice lolly sticks.
Start by placing 3 blackberries in the bottom of each mold. Use the back of a spoon or fork to slightly mash the berries.
Mix yoghurt, coconut sugar and vanilla in a bowl and pour it in the popsicle molds. Leave about 5 mm on the top.
Put a lolly stick in each mold and add granola until the yoghurt is completely covered. Place the molds in the freezer for 4-6 hours, or overnight. If you have trouble removing the popsicles from the molds, you can place them in hot water for a few minutes and try again.
