I’ve spent a lot of time with friends these last days and I feel so inspired and my heart is so full of joy. On Friday I met my super sweet friend Karoline for coffee. We went to Café Pascal to pick up two large cups of coffee and then we sat down in a park to talk about everything and nothing. It was my first coffee in a park this year!! As we sat down I noticed that the sun actually felt warm on my skin and I dawned on me that it really is spring.
Soon, the blue sky turned grey and the first raindrops started to fall. We decided to take a walk to the city centre and no rain could stop us from having a great time. Karoline is such a sweet person and it’s impossible to not love her. After finishing our coffee we went searching for props before we ended up among the cherry trees in Kungsträdgården. It must be the most popular place for photo shoots in Stockholm right now. After snapping a few photos we went to Gamla Stan. I realized how amazing it is to be a tourist in your own city. Whenever I’m in town I’m always on my way to a meeting or something and I almost never enjoy a stroll among the houses in Gamla Stan. It’s such a shame because Stockholm is ah-mazing! It was such a lovely afternoon and I can’t wait until I get to visit Karoline this summer.
After these last days I cannot wait for summer to arrive. We’re decorating our balcony and this year we’re going to fill it with blankets, carpets and pillows so that we can spend every summer evening out there. I’m just waiting for the temperature to pop up so that I can start filling it with plants. It’s going to be a jungle out there and I’m gonna show you as soon as it’s done. I just want to be out there talking, reading, sipping smoothies, lemonade and red wine.
Although it’s not really ice cream weather yet, I couldn’t stop myself from making popsicles. These banana popsicles are so super easy to make and they are perfect for summer hangouts with friends.
Frozen banana popsicles
50 - 100 g Vegan chocolate
8 Ice cream sticks
Melt the chocolate over boiling water.
Cut the bananas into halves and put a stick in every half.
Dip the bananas in the melted chocolate and place on parchment paper.
Sprinkle with toppings of your choice and then place the banana popsicles in the freezer for at least one hour. Enjoy!
