Every summer, just before we leave the countryside for the city again, we spend a day, or half a day, in the forest picking berries. There is this path that starts just by our house and when you follow it, you’ll soon find yourself on an overgrown dirt road that hasn’t been used for ages, except by elks and deer and, occasionally, a berry picker or two. When you then follow this road through the forest, you’ll eventually arrive in blueberry heaven. In the middle of the forest, there is this huge area, entirely filled with blueberry bushes. In a good year, you can pick 1 liter from just a couple of bushes. You can just sit down and fill your basket and you don’t have to move at all. But that’s in a good year. Sometimes you can search the entire area (well, almost) and yet only bring half a liter back home.

Anyway, I wasn’t going to ramble about blueberries today. What I wanted to say is that along this road to blueberry wonderland, there is this raspberry bush. It’s partly hidden behind a tree, and you have to cross a ditch to get to it. But it’s there, and it has the most delicious raspberries I’ve ever tasted. And there are no worms in them. I found this bush only a couple of years back, but since then, we’ve made a stop there too, to pick as many raspberries as we can carry. Then, when we’re back home, we freeze them so that we can enjoy the Swedish summer berries even when there is snow on the ground. The freezer is great in that way, don’t you agree?

I’m not that kind of girl who likes to make jam and cordial and those sweet things. Instead, I use our freezer to preserve whatever I have picked - blueberries, chanterelles or raspberries. Freeze your berries in small boxes and you have the perfect serving sizes ready when you want to use them. I often use berries in smoothies, so basically I just use boxes that will store like 100 g of berries - perfect for a smoothie.

Since I can’t pick everything I want myself, I think it’s great to combine your own harvest with what you can find in the grocery store. When it comes to smoothies, I love to buy frozen mango pieces and frozen sea buckthorn. The mango gives the smoothie such a great texture and sweetness, and the sea buckthorn berries are filled with antioxidants and vitamin C. Perfect for the autumn/winter when everyone is walking around with a cold and you just want to hide in your closet to avoid getting sick.

Anyhoo, I prefer to buy frozen ingredients to my smoothies because 1) it’s cheaper than fresh ingredients, and 2) you can use as much as you like and then freeze the rest. By freezing the leftovers you don’t have to worry about them turning into some green/white-ish, hairy creature in your fridge, you know what I mean? So, I love the freezer and I love smoothies and I have a recipe for you!

I’m so excited to share my first recipe that I’ve created for Garant. They have such a great selection of organic frozen berries and fruits so making a smoothie was easy-peasy. For this recipe, I’ve used raspberries that I picked myself and organic mango + sea buckthorn from Garant. These three products are staples in my freezer and next week I’m going to show you what else I keep in there. Any guesses? ;)

100 g raspberries
100 g frozen mango
3 tbsp frozen sea buckthorn
plant milk

Toppings

Granola
Mulberries, dried
Pumpkin seeds
Cashews

Directions

  1. Add raspberries, mango and sea buckthorn to a blender and mix on high speed until smooth.

  2. Add plant milk until your smoothie has the consistency that you want.

  3. Pour into a bowl and top with granola, dried berries, and nuts. Enjoy!
