The perfect Christmas breakfast: Rice Pudding | v + gf

Can you believe that it’s almost only a week left before Christmas? In Sweden, we celebrate on Christmas Eve, which I believe isn’t the most common thing. Every family is different, but for us, Christmas Eve starts pretty early in the morning. We usually go up around 7-8 am, have breakfast and then we usually do a puzzle or something to make the time go by a little faster. For breakfast, we always have rice pudding. In Sweden, we eat rice pudding more like oatmeal (ie with milk and toppings), but I know that in other countries the rice pudding is more dessert than breakfast. Well, after breakfast, puzzles and lots of Christmas candy it’s finally time for lunch.

Then we have the traditional Christmas buffet, which usually means meatballs, Christmas ham, sausages, salmon, egg, herring, beetroot + apple salad/spread and bread. I obviously don’t eat the meat, and in our house, we also have a lot of vegetables on the menu. Like roasted brussels sprouts and kale salad, for example. After lunch, at 3 pm, it’s time to watch Donald Duck and his friends celebrate Christmas (on TV). I think most Swedish families watch this Christmas show, and even though I’ve seen it 27 times, I still love it! And of course everyone older than 50 falls asleep during the show. I don’t know why, but it always happens.

Anyway, after some more candy, it’s time to open the gifts. This usually takes some time and then it’s another TV show that is mandatory in our house (Kalle loves it). And then we usually eat rice pudding once more in the evening before it’s time to go to bed. So, this is basically how the celebrations are in our house. And as you can see, the rice pudding plays a very important role in the Christmas festivities. So what could possibly be better than sharing the recipe so that you can make it too? 🙂 <3

Vegan Rice Pudding

serves 2

1 dl | 100 ml short-grain or long-grain white rice (grötris om du bor i Sverige)
2 dl water
pinch of salt
1/4 tsp ground vanilla
1-2 tbsp maple syrup
4 dl | 400 ml oat drink

To serve

ground cinnamon
oat drink (optional)

Directions

  1. Add water, rice, and salt to a saucepan and bring to a boil.

  2. Lower heat, cover the pan and let cook for about 10 minutes.

  3. Add maple syrup, vanilla and oat drink and bring to a boil.

  4. Reduce heat again (to 1-2 if the scale goes to 9), cover the pan and let the pudding rest for about 30 minutes. This allows the rice to absorb the oat drink. Stir occasionally.

  5. Serve the rice pudding with lots of ground cinnamon and oat drink if you want.

    Rice pudding is one of my favorite dessert. I am glad there is a gluten-free and vegan version. I was wondering where you can get oat drink. Also, what would be a substitution for oat drink if I cannot find one?

      Yay, I’m glad you found your way here and that you like the recipe. Oat drink is huge in Sweden and I think it’s available in the US and some countries in Europe. Where do you live? If you can’t find oat drink, I’m sure almond milk, rice milk or any other plant milk will work just fine. Have a wonderful day! <3
