Green Pea Patties | The Nordic Kitchen

Raise your hand if you recognize this: you are about 7 or 8 years old. You’re sitting at the dinner table, having just finished your dinner, except for a pile of green peas in the corner of your plate. Your parents tell you that you have to eat every pea on your plate and you answer that you’re full. Then this comes: well, then you’re too full for dessert to. You tell them that you’re not, because the dessert goes into another stomach – a stomach that never gets full. And so the argument starts. Eventually, you realize that the pea-fight is never to be won so you realize that you have to eat them to get the dessert.

I guess all kids have arguments like these with their parents. You know, just to try how far they can go. It doesn’t need to be peas, I guess a lot of kids have serious problems with broccoli and spinach too. Never in my life, I could have guessed that I 20 years later would (willingly) make veggie patties based on one key ingredient – green peas. But here I am, thinking that green pea patties are one of the best things you can eat. I mean, what happened here?

I don’t know. And it doesn’t matter, so let’s just leave it there and talk about these patties. They have such a delicious and tangy flavor, thanks to the peas. Served with the easiest peanut sauce and brown rice they are really the best. I’ve tried this recipe at least 10 times, yet not shared it on the blog. That’s a shame, don’t you think? What I’ve found out during these trials is that you have to be a bit flexible when it comes to the proportions. I believe it has to do with the peas. Some might contain more water than others? I don’t know, but my suggestion is that you add the flour a little at the time, just to be sure you don’t add too much.

Green pea patties with brown rice and peanut sauce

2-4 servings (depends on how hungry you are)

500 g green peas (I use frozen)
1 lemon, the juice
1 – 1 1/2 dl (about 1/2 cup) corn flour
salt and black pepper
1 tsp chili flakes

un-flavored coconut oil for cooking

Peanut butter sauce

3 tbsp smooth peanut butter
1 tbsp canola / rapeseed oil
2-3 tbsp water

To serve

Brown rice

Directions

  1. Cook the rice according to the instructions on the package.

  2. Add all ingredients for the pea patties to a blender and mix until you have a dough-like consistency. Use your hands to make small balls and then gently, use your hand to flatten them out.

  3. Heat up a little un-flavored coconut oil in a frying pan over medium heat. Cook the pea patties for 2-3 minutes on each side.

  4. Prepare the peanut butter sauce by first mixing peanut butter and rapeseed oil. When you have a smooth mix, add a little water to it and stir thoroughly. At first, it will look like the sauce has curdled, but just keep stiring and it will go away. Add some more water and repeat the process until you have the desired consistency of your peanut sauce. Serve the pea patties with the rice and peanut butter sauce and enjoy.
