Gingerbread Christmas Smoothie

I absolutely love having a huge green smoothie for breakfast. Preferably with an avocado toast on the side. I feel super energized and I stay full until lunch time. I usually throw in lots of spinach, a banana, some mango, maybe some kale, cucumber and lots of lemon. Sometimes I replace this green drink with some oatmeal, a bowl of plant-based yogurt or a smoothie bowl consisting of frozen bananas and whatever fruits/veggies I feel like adding.

This week I got this, may I say brilliant, idea to make a Christmas inspired smoothie for breakfast. It was super spontaneous and I decided to go for a gingerbread flavor, which is one of my favorites. So, I just put all the ingredients in the blender and hoped for the best. And boy did it turn out great! I’ve made this smoothie every day since and it’s indeed a new favorite in the house. K loves it too.

The last days before Christmas are often filled to the brim with candy, cookies and sweets so I wanted to share a healthy recipe that still taste a lot like Christmas. Hope you’ll love this as much as we do! <3 Merry Christmas!
