I often enjoy being busy. Like, having a lot of things to do, yet managing to do them all without becoming totally stressed out. I guess it’s more like I enjoy being productive, rather than being busy. When I have to, I can be extremely productive. Last Friday for example. We were going to my in-laws for the weekend and I was supposed to pick up our rental at 2 pm. At 11 am I realized that I had a lot of stuff to do and that I only had like 2,5 hours to do them all. So while I talked to my aunt <3 (it was her birthday) I also uploaded the photos for the blog post I was working on and while I waited for them to upload (still talking to auntie), I wrote and sent a couple of emails. Then I moved on to the kitchen. I decided to make scones for lunch so I prepared them and while they were in the oven I vacuum-cleaned the apartment, went out with the garbage bag and started packing my bag. Like the queen of multitasking, right?
This week is completely different. I have so, so much to do and I am getting nothing done. Simple as that. How can this be? As I sat at my desk earlier today, staring at the computer screen I realized something. I am super talented at getting sh*t done when it comes to laundry, cleaning, baking and other household related things. But when it comes to creative processes I really need time. I need to write like 5 blog posts and I have written one (this one) so far. The more I think about that I have to create things, the more stressed I become. I can’t write on demand, I need to write when my brain wants me to write. I wish I could produce stories aka blog posts as fast as I can clean and pack my bags, but I can’t. And it doesn’t get any better having to listen to the neighbour’s kid screaming and crying 24/7. Phew!
It’s not like I’m not filled with business energy – I am. I have so many plans and I want to do so much, just not what I need to do. That’s probably why I spent 2 hours this morning changing the layout of the blog and writing down the things I need to fix (read: ask my boyfriend’s brother to fix for me bc he’s the master of web design). I feel like a kid here, wanting to do only the fun stuff and none of the important (but rather boring) things. I think it’s time for me to grow up 😉
At least I managed to cook and photograph a new recipe today. I’ve decided to take a full time vacation this year, which means that I won’t be working with the blog during my vacation. To be able to do that I need to produce and prepare blog posts in advance so that you guys still will be able to find new content here while I’m away. Hence the stress. Heh. I will still be updating Instagram bc addicted and so much fun 😉 And like I said, the blog will be updated too, but I will schedule them in advance and not write + publish the same day as I usually do.
What I’m doing this week:
Monday (yesterday) – working full time at my regular job at Helhetshälsa.
Tuesday (today) – writing blog posts (well, you now know how this is going), cooking + photographing a new recipe, writing texts for upcoming freelance projects and updating the blog.
Wednesday – accounting, accounting, accounting. I need to get my papers in order before the vacation. I also have an appointment at Green Heads to get my hair ready for summer. I really need a new haircut and I’m really looking forward to an hour in paradise. Some well-needed me time. You can read all about my last visit at Green Heads here. The afternoon will be spent working at Helhetshälsa.
Thursday – photo shoot day + my mum comes to visit. I’ll be running errands (like buying a map for our upcoming roadtrip in the north of Sweden and Norway + buying new pens).
Friday – I’m working full time at my regular job. Then I have a coffee date with Agnes and then I’m heading home to celebrate the start of the vacation with some great food, wine and the best of company. I can’t wait!
Kladdkaka – Swedish Chocolate Cake – is the most googled recipe in Sweden and probably the most popular dessert/coffee cake to serve at a classic Swedish fika. It’s really like any other chocolate cake, only thinner. And really, really creamy. It’s sooo good!
Kladdkaka – Swedish Chocolate Cake (glutenfree)
1 3/4 dl light muscovado sugar
100 g butter or unflavored coconut oil
1 dl rice flour
1 dl cacao
1/2 tsp vanilla powder
pinch of salt
50 g organic dark chocolate (70 % cacao or more)
Preheat the oven to 175°C.
Whisk together eggs and sugar.
Melt the butter and add to the egg mix.
In a separate bowl, stir together the dry ingredients (not the chocolate).
Add the dry ingredients to the egg batter and stir.
Chop the chocolate and add to the cake batter. Stir once again.
Prepare a springform pan by grating the bottom and the ”walls” with butter or coconut oil. Add some cacao and turn the pan to cover it all with cacao.
Pour the batter into the pan and bake for 15 minutes in the middle of the oven. Let cool and serve with whipped cream or icecream. Enjoy! <3
